In a saucepan that can hold about 2 quarts, combine the lemon juice, lemon zest, sugar, eggs, and butter.
Place the saucepan on the stove over medium-low heat.
Cook the mixture, stirring with a whisk, until it becomes thick enough to leave marks from the whisk. This usually takes around 6 minutes.
Keep an eye on the surface of the mixture. When you see the first bubble appear, it means it's thick enough.
