3tablespoonfat-free salsadrained of extra liquid before measuring
2(10-inch) low carb flour tortillas
4tablespoonfat free sour cream
⅛mediumripe avocadocut into 2 wedges
Instructions
Preheat your oven to 400° F.
Spray a small baking sheet with cooking spray.
Spray a large nonstick skillet with cooking spray, then heat it over medium-low heat.
In a large bowl, mix together egg whites and eggs using a wire whisk.
Add bacon, oregano, salt, pepper, and salsa to the egg mixture; stir well to combine everything.
Pour the egg mixture into the heated skillet, then turn up the heat to medium.
Wait until the eggs start to set a little, then scramble them with a spatula.
Once the eggs are fully cooked but still look a bit shiny, take the skillet off the heat.
Lay out the tortillas and put half of the egg mixture into the center of each tortilla.
Roll up each tortilla to cover the egg mixture, folding the ends in to keep everything inside.
Place the rolled burritos seam-side down on the baking sheet you prepared earlier.
Bake the burritos in the oven for about 5 minutes, or until they are very hot.
After baking, serve each burrito with a tablespoon of sour cream and a slice of avocado on top.
