Ingredients
 

  • 2 large eggs
  • 3 large egg whites
  • 2 slices canadian bacon finely chopped
  • ¼ teaspoon dried oregano
  • salt to taste
  • ground black pepper to taste
  • 3 tablespoon fat-free salsa drained of extra liquid before measuring
  • 2 (10-inch) low carb flour tortillas
  • 4 tablespoon fat free sour cream
  • medium ripe avocado cut into 2 wedges

Instructions
 

  • Preheat your oven to 400° F.
  • Spray a small baking sheet with cooking spray.
  • Spray a large nonstick skillet with cooking spray, then heat it over medium-low heat.
  • In a large bowl, mix together egg whites and eggs using a wire whisk.
  • Add bacon, oregano, salt, pepper, and salsa to the egg mixture; stir well to combine everything.
  • Pour the egg mixture into the heated skillet, then turn up the heat to medium.
  • Wait until the eggs start to set a little, then scramble them with a spatula.
  • Once the eggs are fully cooked but still look a bit shiny, take the skillet off the heat.
  • Lay out the tortillas and put half of the egg mixture into the center of each tortilla.
  • Roll up each tortilla to cover the egg mixture, folding the ends in to keep everything inside.
  • Place the rolled burritos seam-side down on the baking sheet you prepared earlier.
  • Bake the burritos in the oven for about 5 minutes, or until they are very hot.
  • After baking, serve each burrito with a tablespoon of sour cream and a slice of avocado on top.
