Bacon Egg Breakfast Burritos (Weight Watchers Friendly)
Ingredients
- 2 large eggs
- 3 large egg whites
- 2 slices canadian bacon finely chopped
- ¼ teaspoon dried oregano
- salt to taste
- ground black pepper to taste
- 3 tablespoon fat-free salsa drained of extra liquid before measuring
- 2 (10-inch) low carb flour tortillas
- 4 tablespoon fat free sour cream
- ⅛ medium ripe avocado cut into 2 wedges
Instructions
- Preheat your oven to 400° F.
- Spray a small baking sheet with cooking spray.
- Spray a large nonstick skillet with cooking spray, then heat it over medium-low heat.
- In a large bowl, mix together egg whites and eggs using a wire whisk.
- Add bacon, oregano, salt, pepper, and salsa to the egg mixture; stir well to combine everything.
- Pour the egg mixture into the heated skillet, then turn up the heat to medium.
- Wait until the eggs start to set a little, then scramble them with a spatula.
- Once the eggs are fully cooked but still look a bit shiny, take the skillet off the heat.
- Lay out the tortillas and put half of the egg mixture into the center of each tortilla.
- Roll up each tortilla to cover the egg mixture, folding the ends in to keep everything inside.
- Place the rolled burritos seam-side down on the baking sheet you prepared earlier.
- Bake the burritos in the oven for about 5 minutes, or until they are very hot.
- After baking, serve each burrito with a tablespoon of sour cream and a slice of avocado on top.
