Place a large nonstick skillet on the stove over medium heat.
Add the beef and 1/2 teaspoon of salt to the skillet.
Use a wooden spoon to break up the meat as it cooks. Keep cooking until the meat is no longer pink, which usually takes about 5 minutes.
Add the onion and jalapeño to the skillet.
Stir the vegetables often and cook them until they become soft, which should take around 5 minutes.
Add the garlic, cumin, and coriander to the skillet.
Keep stirring the ingredients together and cook until you can smell a nice fragrance, which takes about 1 minute.
Put the tomatoes and the remaining 1/4 teaspoon of salt into the skillet.
Occasionally stir the mixture and cook until most of the liquid has evaporated, which should take around 4-5 minutes.
Take the beef mixture and divide it evenly among the tortillas.
Place lettuce, Cheddar cheese, and salsa (if you want to use it) on top of the beef mixture, making sure to distribute them evenly.
