Best Weight Watchers Ground Beef Tacos
Ingredients
- ¾ pound 93% lean ground beef
- 1 medium onion diced
- 1 medium jalapeno pepper seeded and minced
- 2 cloves garlic minced
- 1½ teaspoon ground coriander
- 1½ teaspoon ground cumin
- ¾ teaspoon salt
- 1 can (14½ oz) diced tomatoes
- 8 corn tortillas
- 2 cups lettuce chopped, lightly packed
- 2 ounce reduced-fat cheddar cheese
Instructions
- Place a large nonstick skillet on the stove over medium heat.
- Add the beef and 1/2 teaspoon of salt to the skillet.
- Use a wooden spoon to break up the meat as it cooks. Keep cooking until the meat is no longer pink, which usually takes about 5 minutes.
- Add the onion and jalapeño to the skillet.
- Stir the vegetables often and cook them until they become soft, which should take around 5 minutes.
- Add the garlic, cumin, and coriander to the skillet.
- Keep stirring the ingredients together and cook until you can smell a nice fragrance, which takes about 1 minute.
- Put the tomatoes and the remaining 1/4 teaspoon of salt into the skillet.
- Occasionally stir the mixture and cook until most of the liquid has evaporated, which should take around 4-5 minutes.
- Take the beef mixture and divide it evenly among the tortillas.
- Place lettuce, Cheddar cheese, and salsa (if you want to use it) on top of the beef mixture, making sure to distribute them evenly.
