In a large saucepan, place blueberries, sugar, and water.
Heat the mixture over medium-high heat until it starts to simmer.
Change the heat to medium and continue to simmer, stirring from time to time, until most of the blueberries pop open and turn into a purple sauce, which should take about 5 to 7 minutes.
Remove the saucepan from the heat and add lemon zest, lemon juice, and a pinch of salt.
Stir everything together and allow it to cool until it's warm. If you're not using the sauce right away, place it in a container, cover it, and keep it in the refrigerator until you're ready to use it. Reheat it if needed.
To serve, evenly distribute the Greek yogurt into 6 small dessert dishes.
Top each dish of yogurt with the warm blueberry sauce.
Using a spoon, gently swirl the sauce into the yogurt to create a marbled effect.
