Ingredients
 

  • 2 cups fresh blueberries
  • 2 tablespoon sugar
  • 2 tablespoon water
  • ½ teaspoon grated lemon zest
  • ½ teaspoon lemon juice
  • pinch salt
  • 3 cups fat-free plain Greek yogurt

Instructions
 

  • In a large saucepan, place blueberries, sugar, and water.
  • Heat the mixture over medium-high heat until it starts to simmer.
  • Change the heat to medium and continue to simmer, stirring from time to time, until most of the blueberries pop open and turn into a purple sauce, which should take about 5 to 7 minutes.
  • Remove the saucepan from the heat and add lemon zest, lemon juice, and a pinch of salt.
  • Stir everything together and allow it to cool until it's warm. If you're not using the sauce right away, place it in a container, cover it, and keep it in the refrigerator until you're ready to use it. Reheat it if needed.
  • To serve, evenly distribute the Greek yogurt into 6 small dessert dishes.
  • Top each dish of yogurt with the warm blueberry sauce.
  • Using a spoon, gently swirl the sauce into the yogurt to create a marbled effect.
