Blueberry Bliss Yogurt Dessert
Ingredients
- 2 cups fresh blueberries
- 2 tablespoon sugar
- 2 tablespoon water
- ½ teaspoon grated lemon zest
- ½ teaspoon lemon juice
- pinch salt
- 3 cups fat-free plain Greek yogurt
Instructions
- In a large saucepan, place blueberries, sugar, and water.
- Heat the mixture over medium-high heat until it starts to simmer.
- Change the heat to medium and continue to simmer, stirring from time to time, until most of the blueberries pop open and turn into a purple sauce, which should take about 5 to 7 minutes.
- Remove the saucepan from the heat and add lemon zest, lemon juice, and a pinch of salt.
- Stir everything together and allow it to cool until it's warm. If you're not using the sauce right away, place it in a container, cover it, and keep it in the refrigerator until you're ready to use it. Reheat it if needed.
- To serve, evenly distribute the Greek yogurt into 6 small dessert dishes.
- Top each dish of yogurt with the warm blueberry sauce.
