- ½ cup boiling water
- 3 ounces fat-free sugar-free instant vanilla pudding mix
- 2 cups fat-free lemon yogurt divided
- 1 cup skim milk
- 1 cup fat-free plain yogurt
Instructions
- In a small bowl, mix together the sugar-free lemon gelatin and boiling water until the gelatin is fully dissolved. This should take about 2 minutes. Let it cool down for a bit.
- In a big bowl, use an electric mixer on medium speed to blend the fat-free sugar-free instant vanilla pudding mix, 1 cup of the lemon yogurt, skim milk, and fat-free plain yogurt until everything is mixed well.
- Add the gelatin mixture to the big bowl and stir until everything is thoroughly combined.
- Pour the mixture into individual dessert glasses. Cover them up and put them in the refrigerator. Let them chill until they're firm, which usually takes at least 8 hours.
- When it's time to serve, add 2 tablespoons of the remaining lemon yogurt on top of each dessert glass.
