In a small bowl, mix together the sugar-free lemon gelatin and boiling water until the gelatin is fully dissolved. This should take about 2 minutes. Let it cool down for a bit.
In a big bowl, use an electric mixer on medium speed to blend the fat-free sugar-free instant vanilla pudding mix, 1 cup of the lemon yogurt, skim milk, and fat-free plain yogurt until everything is mixed well.
Add the gelatin mixture to the big bowl and stir until everything is thoroughly combined.
Pour the mixture into individual dessert glasses. Cover them up and put them in the refrigerator. Let them chill until they're firm, which usually takes at least 8 hours.
When it's time to serve, add 2 tablespoons of the remaining lemon yogurt on top of each dessert glass.
