In a small bowl, mix sugar and cinnamon together. Then, set this bowl aside.
Peel the potatoes and cut them into ½-inch-thick slices. Next, cut each slice into ½-inch-thick sticks. You should end up with about 48 fries.
Place the fries on the baking sheet. Make sure they don't touch each other.
Spray the fries with cooking spray and sprinkle some salt over them.
Bake the fries for 20 minutes in the oven.
Take the fries out of the oven. Spray them again with cooking spray and sprinkle half of the sugar and cinnamon mixture on top.
Flip the fries over. Spray them once more with cooking spray and add the rest of the sugar and cinnamon mixture.
Put the fries back in the oven and bake for another 10 minutes.
Remove the fries from the oven, toss them well, and bake for about 5 more minutes, or until they are brown and tender.
Finally, take the baking sheet out of the oven and place it on a wire rack. Let the fries cool down for a few minutes before serving.
