Before heating, spray the grill rack or grill pan with nonstick spray.
Heat the grill to medium-high.
In a small bowl, whisk together lemon zest and juice, honey, salt, and black pepper to make the sauce.
Spray the carrots with nonstick spray.
Grill the carrots, turning them now and then, until they are lightly charred and almost tender, about 10 minutes.
Brush the carrots with some of the sauce.
Keep grilling the carrots, brushing them once or twice more with sauce, until they are tender, about 5 more minutes.
Place the carrots on a platter.
Drizzle more sauce over the carrots and sprinkle them with mint.
Serve the carrots with any sauce that's left.
