Ingredients
 

  • 2 teaspoon lemon zest finely grated
  • ¼ cup fresh lemon juice
  • 2 tablespoon honey
  • ¾ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 12 medium fresh carrots peeled
  • 3 tablespoon fresh mint chopped

Instructions
 

  • Before heating, spray the grill rack or grill pan with nonstick spray.
  • Heat the grill to medium-high.
  • In a small bowl, whisk together lemon zest and juice, honey, salt, and black pepper to make the sauce.
  • Spray the carrots with nonstick spray.
  • Grill the carrots, turning them now and then, until they are lightly charred and almost tender, about 10 minutes.
  • Brush the carrots with some of the sauce.
  • Keep grilling the carrots, brushing them once or twice more with sauce, until they are tender, about 5 more minutes.
  • Place the carrots on a platter.
  • Drizzle more sauce over the carrots and sprinkle them with mint.
  • Serve the carrots with any sauce that's left.
