Grilled Lemon-Mint Carrots

Ingredients
- 2 teaspoon lemon zest finely grated
- ¼ cup fresh lemon juice
- 2 tablespoon honey
- ¾ teaspoon salt
- ¼ teaspoon ground black pepper
- 12 medium fresh carrots peeled
- 3 tablespoon fresh mint chopped
Instructions
- Before heating, spray the grill rack or grill pan with nonstick spray.
- Heat the grill to medium-high.
- In a small bowl, whisk together lemon zest and juice, honey, salt, and black pepper to make the sauce.
- Spray the carrots with nonstick spray.
- Grill the carrots, turning them now and then, until they are lightly charred and almost tender, about 10 minutes.
- Brush the carrots with some of the sauce.
- Keep grilling the carrots, brushing them once or twice more with sauce, until they are tender, about 5 more minutes.
- Place the carrots on a platter.
- Drizzle more sauce over the carrots and sprinkle them with mint.
- Serve the carrots with any sauce that's left.
