  • In a saucepan, add carrots.
  • Cover with water.
  • Bring to a boil.
  • Reduce heat and cook to desired doneness.
  • Using a colander, drain water off carrots.
  • Transfer carrots to serving bowl
  • In the saucepan, add butter and melt over medium heat.
  • Melt butter and add brown sugar and ginger, stirring to blend.
  • Add brown sugar and ginger. Stir to mix well.
  • Add sauce to carrots and stir to coat.

    I am not one for carrots, but my husband had bought a 1 pound bag of sliced carrots for a recipe without realizing we had some already. Not wanting them to go bad I decided to make this recipe for him. Definitely could smell the ginger, but it wasn’t overpowering in taste. My husband recommend to put a little salt on mine as he did his. For someone who doesn’t like carrots, he was amazed at how fast I was eating them. They were delicious! As we have left overs I’ll probably be fighting him for them tomorrow night! Definitely will be making them again!
