Quick and Easy Shrimp Fried Rice
Ingredients
- 1 cup roasted broccoli
- 1 cup cooked brown rice
- 3 ounces cooked frozen shrimp
- 1 large egg
- ½ cup fresh carrots chopped
- reduced-sodium soy sauce to taste
- sliced scallions optional
Instructions
- Heat a nonstick skillet coated with cooking spray over medium-high heat.
- Heat a nonstick skillet coated with cooking spray over medium-high heat.
- Add roasted vegetables, rice, and shrimp to the skillet.
- Toss the ingredients together and heat through.
- Move the rice mixture to the side of the skillet.
- Crack an egg in the middle of the skillet.
- Scramble the egg.
- Stir the scrambled egg into the rice mixture.
- Add carrots to the skillet.
- Sprinkle soy sauce over the mixture.
- Warm the mixture through.
- Garnish with scallions.
