  • Heat a nonstick skillet coated with cooking spray over medium-high heat.
  • Heat a nonstick skillet coated with cooking spray over medium-high heat.
  • Add roasted vegetables, rice, and shrimp to the skillet.
  • Toss the ingredients together and heat through.
  • Move the rice mixture to the side of the skillet.
  • Crack an egg in the middle of the skillet.
  • Scramble the egg.
  • Stir the scrambled egg into the rice mixture.
  • Add carrots to the skillet.
  • Sprinkle soy sauce over the mixture.
  • Warm the mixture through.
  • Garnish with scallions.
