Sprinkle the chicken with lemon juice, salt, and pepper.
Place the chicken in the grill pan.
Grill the chicken, turning once, until cooked through, about 5 minutes.
In a small bowl, stir together the mayonnaise and chopped chipotle peppers.
Place 4 slices of toast on a plate. Divide the lettuce leaves among the 4 slices of toast.
Top each slice of toast with 2 tomato slices.
Place one-quarter of the grilled chicken on each slice of toast.
Spread about 2 teaspoons of the chipotle mayonnaise on each of the remaining slices of toast.
Place the remaining slices of toast on top of the sandwiches to finish.
