Ingredients
- 1 pound boneless skinless chicken breast thinly sliced
- 1 teaspoon lemon juice
- salt to taste
- ground black pepper to taste
- 2 tablespoon reduced-calorie mayonnaise
- 1 tablespoon Canned chipotle pepper finely chopped
- 4 slices lettuce
- 8 slices reduced-calorie wheat bread toasted
- 1 tomato cut into 8 slices
Instructions
- Heat a ridged grill pan over high heat.
- Sprinkle the chicken with lemon juice, salt, and pepper.
- Place the chicken in the grill pan.
- Grill the chicken, turning once, until cooked through, about 5 minutes.
- In a small bowl, stir together the mayonnaise and chopped chipotle peppers.
- Place 4 slices of toast on a plate. Divide the lettuce leaves among the 4 slices of toast.
- Top each slice of toast with 2 tomato slices.
- Place one-quarter of the grilled chicken on each slice of toast.
- Spread about 2 teaspoons of the chipotle mayonnaise on each of the remaining slices of toast.
- Place the remaining slices of toast on top of the sandwiches to finish.
