Creamy Chocolate Yogurt Popsicles
Equipment
- Fine-Mesh Sieve
Ingredients
- 1½ cups unsweetened chocolate almond milk
- ¾ cup semisweet chocolate chips
- 1½ cups fat-free plain Greek yogurt
- 2 teaspoon pure vanilla extract
Instructions
- In a small saucepan, bring the almond milk to a simmer over medium-low heat.
- Add the chocolate chips to the saucepan and increase the heat to medium.
- Stir constantly until the chocolate chips melt completely.
- Remove the saucepan from the heat and let the mixture cool for 5 minutes.
- In a medium-sized mixing bowl, add the yogurt and vanilla extract.
- Pour the cooled chocolate mixture into the bowl with the yogurt and vanilla.
- Using a wire whisk, mix everything until smooth.
- Place a fine-mesh sieve over a large bowl.
- Strain the mixture through the sieve into the large bowl.
- Divide the mixture evenly among 12 ice pop molds.
- If the molds do not have tops with sticks, freeze the pops for 1 hour.
- After 1 hour, insert wooden ice-pop sticks into the pops.
- Freeze the pops for about 6 hours, or until they are completely frozen.
