Lay the tortillas on a cutting board. Spread each tortilla with the mayonnaise and mustard mixture.
Place chopped turkey in the center of each tortilla. Season with salt and black pepper.
Top each with tomato slices, chopped onion, lettuce, and shredded cheese.
Fold in the sides of each tortilla, then roll it up tightly.
Cut each wrap in half on a diagonal.
