Turn on the Instant Pot and select the Sauté function.
Add olive oil and heat until hot.
Place the chicken breasts in the pot and brown both sides for 5 to 10 minutes.
Sprinkle salt over the chicken.
Pour in the water and scrape any browned bits from the bottom of the pot.
Cancel the Sauté function.
Close and lock the lid.
Select high pressure and set the timer for 10 minutes.
Allow 10 to 15 minutes for pressure to build.
When cooking is complete, release the pressure using the quick-release method.
Remove the lid.
Dice, shred, or slice the chicken as desired for serving.
