Divide the dough into 8 equal portions. Shape each portion into a ball.
Place a piece of parchment paper on the counter.
Roll each dough ball into a circle that's 3½ to 4 inches wide. Use a bit of flour if the dough sticks.
Turn on your nonstick Belgian waffle iron to preheat it.
Spoon 1 tablespoon of marinara sauce over 4 of the dough circles.
Add 2 tablespoons of cheese on top of the marinara on each circle.
Sprinkle 1 tablespoon of bell pepper over the cheese on each circle.
Place 3 slices of pepperoni on top of the bell pepper on each circle.
Cover each loaded circle with a remaining plain dough circle.
Press the edges of the dough circles together to seal them.
Spray the waffle iron with nonstick spray.
Place the dough packets in the waffle iron. Close the waffle iron lid.
Cook the dough packets until they're lightly browned and crisp, which should take about 4 to 6 minutes.
Serve the finished waffles with the remaining marinara sauce.
