In a large bowl, sift the flour, baking powder, and salt together.
In a different bowl, beat the sugar and oil with an electric mixer.
Add the maple syrup, poppy seeds, lemon juice, and lemon zest to the sugar mixture; beat again.
Mix in ⅓ of the flour mixture and ⅓ cup soy milk to the sugar mixture; beat until just mixed. Don't overdo it.
Repeat with another ⅓ of the flour mixture and ⅓ cup soy milk.
Repeat one more time with the remaining flour mixture and soy milk.
Pour the batter into the loaf pan you prepared earlier.
Bake it for about 35 to 40 minutes. It's done when the top is springy to the touch and a toothpick comes out clean when inserted in the center.
Cut it into 12 equal sized pieces.
