  • Heat your oven to 350° F.
  • Spray a 9- x 5-inch loaf pan with cooking spray.
  • In a large bowl, sift the flour, baking powder, and salt together.
  • In a different bowl, beat the sugar and oil with an electric mixer.
  • Add the maple syrup, poppy seeds, lemon juice, and lemon zest to the sugar mixture; beat again.
  • Mix in ⅓ of the flour mixture and ⅓ cup soy milk to the sugar mixture; beat until just mixed. Don't overdo it.
  • Repeat with another ⅓ of the flour mixture and ⅓ cup soy milk.
  • Repeat one more time with the remaining flour mixture and soy milk.
  • Pour the batter into the loaf pan you prepared earlier.
  • Bake it for about 35 to 40 minutes. It's done when the top is springy to the touch and a toothpick comes out clean when inserted in the center.
  • Cut it into 12 equal sized pieces.
