Poppy Seed Lemon Pound Cake (Vegan)
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- ¼ cup sugar
- 2 tablespoon canola oil
- ½ cup maple syrup
- 2 tablespoon poppy seeds
- ¼ cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 cup soy milk
Instructions
- Heat your oven to 350° F.
- Spray a 9- x 5-inch loaf pan with cooking spray.
- In a large bowl, sift the flour, baking powder, and salt together.
- In a different bowl, beat the sugar and oil with an electric mixer.
- Add the maple syrup, poppy seeds, lemon juice, and lemon zest to the sugar mixture; beat again.
- Mix in ⅓ of the flour mixture and ⅓ cup soy milk to the sugar mixture; beat until just mixed. Don't overdo it.
- Repeat with another ⅓ of the flour mixture and ⅓ cup soy milk.
- Repeat one more time with the remaining flour mixture and soy milk.
- Pour the batter into the loaf pan you prepared earlier.
- Bake it for about 35 to 40 minutes. It's done when the top is springy to the touch and a toothpick comes out clean when inserted in the center.
- Cut it into 12 equal sized pieces.
