Cauliflower Crust Pepperoni Pizza
Ingredients
- 2 cups cauliflower florets
- 1½ cups shredded part-skim mozzarella cheese divided
- ⅔ cup all-purpose flour
- 2 large eggs
- 1 teaspoon fresh oregano minced
- ½ teaspoon kosher salt
- ½ teaspoon granulated garlic
- ⅛ teaspoon fresh ground black pepper
- 1 cup tomato sauce
- 1½ ounces turkey pepperoni thinly sliced
- 1 teaspoon dried italian seasoning
Instructions
- Preheat your oven to 450°F.
- Line a large, rimmed baking sheet with parchment paper and spray it with cooking spray.
- Place cauliflower florets in a food processor and process until they have a rice-like consistency.
- Transfer the processed cauliflower to a large bowl.
- Add 1 cup of cheese, eggs, flour, oregano, garlic, salt, and pepper to the bowl.
- Stir everything together until it's well combined.
- Spoon the mixture onto the prepared baking sheet, forming two 8-inch circles.
- Smooth out the mixture with the back of a spoon to make an even layer.
- Bake in the oven until the bottom turns medium brown, which should take about 20 minutes.
- Carefully flip each crust over.
- Bake for another 10 minutes until the crusts are evenly browned.
- Spoon ½ cup of sauce over each crust.
- Sprinkle each with the remaining ½ cup of cheese and add half of the pepperoni to each.
- If you like, sprinkle with any additional seasoning you prefer.
- Bake until the cheese has melted and everything is heated through, which might take about 5 minutes. You can broil it for the last 5 minutes to brown the cheese more if you like.
- Cut each pizza into 4 slices and serve.
