Healthy Two-Ingredient Pizza Dough with Turkey Pepperoni

Ingredients
- 1 cup plain fat-free Greek yogurt
- 1 cup white self-rising flour
- 1 cup tomato sauce
- ¾ cup shredded part-skim mozzarella cheese
- 20 pieces turkey pepperoni
- 4 tablespoon grated parmesan cheese
- crushed red pepper flakes to taste
Instructions
- Preheat your oven to 375ºF.
- Line a baking sheet with parchment paper.
- In a large bowl, combine yogurt and flour.
- Stir the mixture with a wooden spoon until just combined.
- Continue mixing the dough with your hands until smooth, about 2 minutes.
- If the dough is too sticky, add more flour, 1 tablespoon at a time, until it's not sticky.
- Lay a large piece of parchment paper on your work surface and sprinkle a bit of flour on it.
- Place the dough on the parchment paper.
- Cut the dough into 4 equal pieces with a knife.
- Roll each piece into a 6-7 inch oval using a rolling pin.
- Place the ovals on the prepared baking sheet.
- Bake for about 18 minutes until they start to turn lightly golden.
- Take them out of the oven and top each with ¼ cup of sauce, 3 tablespoons of mozzarella cheese, and 5 pieces of pepperoni.
- Put them back in the oven and bake for a few more minutes until the dough is cooked through and the cheese has melted.
- Serve each with 1 tablespoon of Parmesan cheese and a pinch of red pepper flakes.

Tips and Tricks
Yogurt Type Matters: The type of yogurt can change the texture of your dough. Greek yogurt is ideal because it’s thicker and has less moisture, which means you’ll likely need less flour to get the right consistency.
Flour: Self-rising flour is the go-to since it has leavening agents already mixed in. If you only have all-purpose flour, you can whip up your own by adding 1 ½ teaspoons of baking powder and ¼ teaspoon of salt for every cup of flour.
Stickiness Solution: If the dough sticks to your hands, don’t stress. A little extra dusting of flour can fix that right up. Just don’t go overboard, or the dough might get too dry.
Rolling Right: No rolling pin? No problem. A wine bottle or even a large can works in a pinch, just make sure it’s clean.
Leftover Dough: If you’ve got extra dough, you can store it in the fridge for a day or two. Just make sure it’s wrapped up well.
Freezer-Friendly: You can even freeze the dough. Roll it into your desired shape, partially bake it for about 10 minutes, let it cool, then wrap it up and freeze. When you’re ready, just add toppings and bake.
