Heat a nonstick skillet coated with cooking spray over medium-high heat.

Add roasted vegetables, rice, and shrimp to the skillet.
Toss the ingredients together and heat through.
Move the rice mixture to the side of the skillet.
Crack an egg in the middle of the skillet.
Scramble the egg.
Stir the scrambled egg into the rice mixture.
Add carrots to the skillet.
Sprinkle soy sauce over the mixture.
Warm the mixture through.
Garnish with scallions.
