Prepare your grill for medium-hot indirect cooking, or preheat your oven to 425°F.
Place the pork tenderloin on a large sheet of plastic wrap.
In a small bowl, mix together the olive oil, crushed garlic, fresh rosemary, salt, and black pepper. Crush the rosemary a little with your spoon while you mix.
Spread this mixture all over the pork, making sure to cover the entire surface.
Wrap the loin tightly in the plastic wrap and refrigerate it for at least one hour, or overnight if you have the time.
Once marinated, remove the plastic wrap and place the pork either on the grill or in a roasting pan if you're using an oven.
If grilling, cook the pork over indirect heat, turning it occasionally, until a meat thermometer inserted into the center reads 160°F, which should take about 25 minutes.
If roasting, place the tenderloin in a shallow roasting pan and roast it until the internal temperature reaches 160°F, about 20 minutes.
Once done, remove the pork from the grill or oven and let it rest for 10 minutes before slicing.
