Ingredients
 

  • 1 pound lean pork tenderloin (use one whole loin)
  • 1 tablespoon olive oil
  • 3 cloves garlic crushed
  • 2 tablespoon fresh rosemary
  • ½ teaspoon salt
  • 1 teaspoon ground black pepper

Instructions
 

  • Prepare your grill for medium-hot indirect cooking, or preheat your oven to 425°F.
  • Place the pork tenderloin on a large sheet of plastic wrap.
  • In a small bowl, mix together the olive oil, crushed garlic, fresh rosemary, salt, and black pepper. Crush the rosemary a little with your spoon while you mix.
  • Spread this mixture all over the pork, making sure to cover the entire surface.
  • Wrap the loin tightly in the plastic wrap and refrigerate it for at least one hour, or overnight if you have the time.
  • Once marinated, remove the plastic wrap and place the pork either on the grill or in a roasting pan if you're using an oven.
  • If grilling, cook the pork over indirect heat, turning it occasionally, until a meat thermometer inserted into the center reads 160°F, which should take about 25 minutes.
  • If roasting, place the tenderloin in a shallow roasting pan and roast it until the internal temperature reaches 160°F, about 20 minutes.
  • Once done, remove the pork from the grill or oven and let it rest for 10 minutes before slicing.
