  • In a mixing bowl, add apple juice, garlic, rosemary, mustard, and pepper. Stir to mix well.
  • Remove ⅓ cup of marinade, cover, and place in the refrigerator.
  • In a large Zip lock bag, place pork and the rest of the marinade. Seal securely.
  • Place bag in the refrigerator overnight to marinate.
  • Preheat oven to 350° F
  • Prepare a roasting pan by coating with Nonstick Cooking Spray.
  • Remove pork from the bag and place in prepared roasting pan. Discard the marinade.
  • Add the ⅓ cup reserved marinade on top of the pork.
  • In preheated oven, bake uncovered for 45 minutes or until a meat thermometer inserted in the center of the pork reads 160° F.
  • Let pork stand 10 minutes before cutting.
