Thinly slice the Brussels sprouts using a mandoline or a sharp knife. Place the sliced sprouts in a large bowl.
In a large nonstick skillet, cook the chopped bacon over medium heat until crisp, about 10 minutes.
Remove the skillet from the heat. Stir in the apple cider vinegar, Dijon mustard, and ground black pepper with the bacon.
Pour the bacon dressing over the sliced Brussels sprouts in the bowl.
