Heat a large nonstick skillet over medium-high heat.
On a cutting board, place 1 of the tortillas, and spray both sides with nonstick cooking spray.
Cut the tortilla into quarters.
Arrange the tortilla quarters in the skillet and cook until toasted and crisp, about 1 minute per side.
Let the toasted tortilla quarters cool to room temperature.
Heat the same skillet over medium-high heat again and coat with nonstick spray.
Add the ground turkey, chopped onion, chili powder, salt, and black pepper to the skillet.
Cook the mixture, stirring to crumble the meat, until the turkey is fully cooked and the onion is tender, about 4 minutes.
Add the tomato sauce and honey to the turkey mixture.
Cook, stirring occasionally, until the mixture thickens slightly, about 3 minutes.
Let the turkey mixture cool slightly.
Heat the skillet over medium heat.
Place a (full size) tortilla on the cutting board and spray the top with nonstick spray.
Flip the tortilla over.
Spoon ¾ cup of the turkey filling into the center of the tortilla, leaving a 1½-inch border.
Top the turkey filling with 5 pickle slices and 1 ounce of shredded cheese.
Place one toasted tortilla quarter on top of the filling.
Fold the sides of the tortilla over the filling, creating pleats to cover the tortilla quarter, and press gently on the pleats.
Carefully flip the wrap over and place it in the heated skillet.
Cook the wrap, pressing with a spatula, until crisp, about 2 minutes per side.
Repeat with the remaining ingredients for the other 3 wraps.
