Sloppy Joe Crunch Wraps (Weight Watchers)
Ingredients
- nonstick cooking spray as needed
- 5 Low carb, high fiber tortilla wrap(s)
- 1 pound 99% fat-free ground turkey breast
- ½ cup onion chopped, finely
- 2 teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 cup tomato sauce
- 1 tablespoon honey
- 20 Kosher dill pickle sandwich slices
- 4 ounces reduced-fat shredded cheddar cheese
Instructions
- Heat a large nonstick skillet over medium-high heat.
- On a cutting board, place 1 of the tortillas, and spray both sides with nonstick cooking spray.
- Cut the tortilla into quarters.
- Arrange the tortilla quarters in the skillet and cook until toasted and crisp, about 1 minute per side.
- Let the toasted tortilla quarters cool to room temperature.
- Heat the same skillet over medium-high heat again and coat with nonstick spray.
- Add the ground turkey, chopped onion, chili powder, salt, and black pepper to the skillet.
- Cook the mixture, stirring to crumble the meat, until the turkey is fully cooked and the onion is tender, about 4 minutes.
- Add the tomato sauce and honey to the turkey mixture.
- Cook, stirring occasionally, until the mixture thickens slightly, about 3 minutes.
- Let the turkey mixture cool slightly.
- Heat the skillet over medium heat.
- Place a (full size) tortilla on the cutting board and spray the top with nonstick spray.
- Flip the tortilla over.
- Spoon ¾ cup of the turkey filling into the center of the tortilla, leaving a 1½-inch border.
- Top the turkey filling with 5 pickle slices and 1 ounce of shredded cheese.
- Place one toasted tortilla quarter on top of the filling.
- Fold the sides of the tortilla over the filling, creating pleats to cover the tortilla quarter, and press gently on the pleats.
- Carefully flip the wrap over and place it in the heated skillet.
- Cook the wrap, pressing with a spatula, until crisp, about 2 minutes per side.
- Repeat with the remaining ingredients for the other 3 wraps.
