  • Preheat oven to 350°F.
  • Mix the scallions, turkey, beans, and ½ cup of enchilada sauce together.
  • On a tortilla and put ¼ of the turkey-bean mix on it.
  • Fold the sides of the tortilla in, then fold the top and bottom to wrap up the filling. Place it with the folded side down in a baking dish that's 9 x 13 inches.
  • Pour the rest of the enchilada sauce (½ cup) over the enchiladas.
  • Sprinkle cheese on top of the enchiladas.
  • Cover the baking dish with a lid or foil.
  • Bake in the oven for about 20 minutes, until the enchiladas are heated through and the cheese is melted and bubbly.
