Weight Watchers Easy Turkey Enchiladas
Ingredients
- 6 scallions white and light green parts chopped
- 2 cups cooked boneless skinless turkey breast cubed
- 1 can (15 oz) pinto beans drained and rinsed
- 1 cup enchiladas sauce divided
- 4 fat free flour tortillas
- ½ cup shredded reduced-fat Mexican cheese blend
Instructions
- Preheat oven to 350°F.
- Mix the scallions, turkey, beans, and ½ cup of enchilada sauce together.
- On a tortilla and put ¼ of the turkey-bean mix on it.
- Fold the sides of the tortilla in, then fold the top and bottom to wrap up the filling. Place it with the folded side down in a baking dish that's 9 x 13 inches.
- Pour the rest of the enchilada sauce (½ cup) over the enchiladas.
- Sprinkle cheese on top of the enchiladas.
- Cover the baking dish with a lid or foil.
- Bake in the oven for about 20 minutes, until the enchiladas are heated through and the cheese is melted and bubbly.
