Ingredients
- 1 pound hot-Italian turkey sausage (four links are usually about 1 pound)
- 1 can (15 oz) pinto beans undrained
- 1 can (14½ oz) diced tomatoes with garlic and onions undrained
- 1 can (14½ oz) fire-roasted diced tomatoes with green chilies undrained
- 1 medium onion chopped
- salt to taste
- ground black pepper to taste
- fresh lime (optional)
- sliced scallions (optional)
Instructions
- Take the sausage out of its casing and place it in a large slow cooker (4-quart size or bigger).
- Break the sausage meat into smaller pieces.
- Add the beans, both cans of diced tomatoes along with their liquid, and the onion to the slow cooker.
- Stir everything together well.
- Cover and set the slow cooker to cook on low heat for 5 to 6 hours.
- After cooking, stir in the salt and pepper.
- (Optional) Garnish with chopped scallion and limes before serving.
