  • Take the sausage out of its casing and place it in a large slow cooker (4-quart size or bigger).
  • Break the sausage meat into smaller pieces.
  • Add the beans, both cans of diced tomatoes along with their liquid, and the onion to the slow cooker.
  • Stir everything together well.
  • Cover and set the slow cooker to cook on low heat for 5 to 6 hours.
  • After cooking, stir in the salt and pepper.
  • (Optional) Garnish with chopped scallion and limes before serving.
