Take the sausage out of its casing and place it in a large slow cooker (4-quart size or bigger).
Break the sausage meat into smaller pieces.
Add the beans, both cans of diced tomatoes along with their liquid, and the onion to the slow cooker.
Stir everything together well.
Cover and set the slow cooker to cook on low heat for 5 to 6 hours.
After cooking, stir in the salt and pepper.
(Optional) Garnish with chopped scallion and limes before serving.
