Cut 8 circles from the pie crust using a 4-inch diameter glass or cookie cutter. Re-roll the scraps with a rolling pin if needed to cut the last circle.
Place the crust circles into the muffin tin openings. Press them down on the bottoms and slightly up the sides.
In a bowl, combine the blueberries, sugar, lemon zest, lemon juice, salt, and cornstarch.
Stir the mixture well.
Spoon the blueberry mixture evenly into the crusts.
Bake for 20 minutes, or until the crusts are golden brown and the filling is bubbly.
Allow the pies to cool completely before taking them out of the muffin tin.
Keep the pies at room temperature until you are ready to serve.
Garnish with extra lemon zest and chopped fresh mint before serving.
