Weight Watchers Easy Blueberry Hand Pies
Ingredients
- 7 oz refrigerated or homemade pie crust
- 3 cups fresh or frozen unsweetened wild blueberries (defrosted)
- 3 tbsp sugar
- 1 tsp lemon zest plus more for garnish
- 1 tsp fresh lemon juice
- pinch salt
- 1 tbsp cornstarch
- 1 tbsp fresh mint chopped
Instructions
- Preheat the oven to 425°F.
- Spray a large muffin tin with cooking spray.
- Cut 8 circles from the pie crust using a 4-inch diameter glass or cookie cutter. Re-roll the scraps with a rolling pin if needed to cut the last circle.
- Place the crust circles into the muffin tin openings. Press them down on the bottoms and slightly up the sides.
- In a bowl, combine the blueberries, sugar, lemon zest, lemon juice, salt, and cornstarch.
- Stir the mixture well.
- Spoon the blueberry mixture evenly into the crusts.
- Bake for 20 minutes, or until the crusts are golden brown and the filling is bubbly.
- Allow the pies to cool completely before taking them out of the muffin tin.
