Ingredients
 

  • 7 oz refrigerated or homemade pie crust
  • 3 cups fresh or frozen unsweetened wild blueberries (defrosted)
  • 3 tbsp sugar
  • 1 tsp lemon zest plus more for garnish
  • 1 tsp fresh lemon juice
  • pinch salt
  • 1 tbsp cornstarch
  • 1 tbsp fresh mint chopped

Instructions
 

  • Preheat the oven to 425°F.
  • Spray a large muffin tin with cooking spray.
  • Cut 8 circles from the pie crust using a 4-inch diameter glass or cookie cutter. Re-roll the scraps with a rolling pin if needed to cut the last circle.
  • Place the crust circles into the muffin tin openings. Press them down on the bottoms and slightly up the sides.
  • In a bowl, combine the blueberries, sugar, lemon zest, lemon juice, salt, and cornstarch.
  • Stir the mixture well.
  • Spoon the blueberry mixture evenly into the crusts.
  • Bake for 20 minutes, or until the crusts are golden brown and the filling is bubbly.
  • Allow the pies to cool completely before taking them out of the muffin tin.
  • Keep the pies at room temperature until you are ready to serve.
  • Garnish with extra lemon zest and chopped fresh mint before serving.
