Peach and Raspberry Cobbler So Good You’ll Never Guess It’s WW-Friendly

This cobbler brings all the bright summer flavors together. Sweet, juicy peaches and tart raspberries get baked under a buttery, crisp topping that’s both soft and crunchy. It’s the kind of dessert that feels like a warm hug on a summer night.

Start by tossing the fresh peaches with a touch of powdered sugar to help release their juices, then layer them with raspberries in a baking dish. The topping comes together quickly with a mix of flour, sugar, baking powder, and a bit of vanilla. Cold butter gets worked into the dry ingredients until it forms a crumbly texture that turns perfectly golden in the oven.

Once baked, let it cool for just a few minutes—then dig in while it’s still warm. Serve with a scoop of vanilla ice cream for that extra creamy contrast.

This cobbler is everything you want in a summer dessert—fruity, buttery, and just the right amount of sweet.

Tips and Tricks

Choosing the Best Peaches

Use ripe but firm peaches for the best texture. Overripe peaches can make the cobbler too mushy.

Easy Pitting

To pit peaches easily, slice them in half along the seam, twist to separate the halves, and remove the pit with a spoon.

Sweetening the Fruit

Mixing the peaches with powdered sugar helps them release their natural juices and blend better with the raspberries.

Mixing the Topping

Use cold butter and cut it into the flour mixture until it looks like coarse crumbs. This helps create a flaky topping.

Serving Suggestions

Serve the cobbler warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.

Storing Leftovers

Store any leftovers in an airtight container in the fridge. Reheat in the oven to keep the topping crispy.
