Peach and Raspberry Cobbler
Ingredients
- 6 medium peaches halved, pitted and thinly sliced
- 3 tablespoon powdered sugar
- 1 cup raspberries
- ¾ cup all-purpose flour
- 3½ tablespoon granulated sugar divided
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 3 tablespoon cold unsalted butter
- ⅓ cup light sour cream
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350ºF.
- Place peaches in a medium bowl.
- Add powdered sugar to peaches and toss until sugar dissolves.
- Arrange peach slices in several layers in an 8-inch square baking pan.
- Sprinkle raspberries over the peaches.
- In a large bowl, combine flour, 3 tablespoons of granulated sugar, baking powder, baking soda, and salt.
- Cut butter into small pieces. Add butter to flour mixture. Work butter into flour mixture with a fork or pastry cutter until it looks like coarse crumbs.
- Add sour cream and vanilla extract to the flour mixture. Mix with a fork until dough forms.
- Place dough over the fruit in the baking pan.
- Sprinkle remaining ½ tablespoon of sugar over the top.
- Bake for 40 to 45 minutes, until the top is golden brown and fruit is bubbling.
- Let cool for 10 minutes before serving.
