Place your chicken between two sheets of wax paper.
Use a rolling pin to pound the chicken until it's ¼-inch thick.
In one shallow bowl, add egg whites.
In another shallow bowl, mix bread crumbs, Italian seasoning, and salt.
Dip the chicken into the egg whites, making sure it’s fully coated.
Next, dip the chicken into the bread crumb mixture, coating it well.
Spray a large skillet with cooking spray.
Add oil to the skillet and heat it over medium-high heat. Once it's hot, add the chicken.
Cook the chicken until it's lightly browned and no longer pink in the middle. This should take about 4 minutes on each side.
Pour ½ cup of sauce into the pan you prepared earlier.
Place the cooked chicken in the pan in a single layer.
Pour the remaining sauce evenly over the chicken.
Sprinkle both types of cheese over the chicken.
Bake the chicken in preheated oven until it’s cooked through and the cheese is bubbly. This should take about 25 minutes.
