Ingredients
- 1 pound (4 ounce each) boneless skinless chicken breast
- 2 large egg whites lightly beaten
- ½ cup Italian seasoned breadcrumbs

- ½ teaspoon olive oil
- 1½ cups tomato sauce
- ½ cup shredded part-skim mozzarella cheese
- 2 tablespoon grated parmesan cheese
Instructions
- Preheat oven to 350° F.
- Spray an 8-inch square pan with cooking spray.
- Place your chicken between two sheets of wax paper.
- Use a rolling pin to pound the chicken until it's ¼-inch thick.
- In one shallow bowl, add egg whites.
- In another shallow bowl, mix bread crumbs, Italian seasoning, and salt.
- Dip the chicken into the egg whites, making sure it’s fully coated.
- Next, dip the chicken into the bread crumb mixture, coating it well.
- Spray a large skillet with cooking spray.
- Add oil to the skillet and heat it over medium-high heat. Once it's hot, add the chicken.
- Cook the chicken until it's lightly browned and no longer pink in the middle. This should take about 4 minutes on each side.
- Pour ½ cup of sauce into the pan you prepared earlier.
