  • Spray an 8-inch square pan with cooking spray.
  • Place your chicken between two sheets of wax paper.
  • Use a rolling pin to pound the chicken until it's ¼-inch thick.
  • In one shallow bowl, add egg whites.
  • In another shallow bowl, mix bread crumbs, Italian seasoning, and salt.
  • Dip the chicken into the egg whites, making sure it’s fully coated.
  • Next, dip the chicken into the bread crumb mixture, coating it well.
  • Spray a large skillet with cooking spray.
  • Add oil to the skillet and heat it over medium-high heat. Once it's hot, add the chicken.
  • Cook the chicken until it's lightly browned and no longer pink in the middle. This should take about 4 minutes on each side.
  • Pour ½ cup of sauce into the pan you prepared earlier.
  • Place the cooked chicken in the pan in a single layer.
  • Pour the remaining sauce evenly over the chicken.
  • Sprinkle both types of cheese over the chicken.
  • Bake the chicken in preheated oven until it’s cooked through and the cheese is bubbly. This should take about 25 minutes.
