Add ¼ cup of skim milk, a bit of hot pepper sauce, salt, and pepper to the pot.
Turn the heat to medium and stir everything constantly until it gets hot and thick, which should take about 1 minute.
Lower the heat to low and add cheese. Keep stirring until it gets thicker, about 30 seconds.
Take the pot off the heat, cover it, and put it aside.
For the Eggs:
In a small bowl, beat the eggs, egg whites, some skim milk, salt, and pepper together.
Put oil in a large nonstick skillet and heat it over medium heat.
Pour the egg mixture into the skillet.
Cook the eggs, stirring them around, until they're fully cooked. This should take about 2 to 3 minutes.
Place the cooked eggs on 2 pieces of toast.
Drizzle each toast with the cheese sauce you made earlier.
Top them with the remaining toast slices and they're ready to serve.
