- 3 tablespoon fat-free evaporated milk
- ¼ cup shredded reduced-fat Mexican cheese blend
- 2 teaspoon all-purpose flour
- ¼ cup fat-free skim milk
- hot pepper sauce to taste
- salt to taste
- ground black pepper to taste
- 2 large eggs
- 3 large egg whites
- 1 tablespoon fat-free skim milk
- 1 teaspoon canola oil
- 4 slices toasted bread your choice
Instructions
For the Cheese Sauce:
- In a small pot, mix evaporated milk and flour.
- Add ¼ cup of skim milk, a bit of hot pepper sauce, salt, and pepper to the pot.
- Turn the heat to medium and stir everything constantly until it gets hot and thick, which should take about 1 minute.
- Lower the heat to low and add cheese. Keep stirring until it gets thicker, about 30 seconds.
- Take the pot off the heat, cover it, and put it aside.
For the Eggs:
- In a small bowl, beat the eggs, egg whites, some skim milk, salt, and pepper together.
- Put oil in a large nonstick skillet and heat it over medium heat.
- Pour the egg mixture into the skillet.
- Cook the eggs, stirring them around, until they're fully cooked. This should take about 2 to 3 minutes.
- Place the cooked eggs on 2 pieces of toast.
- Drizzle each toast with the cheese sauce you made earlier.
- Top them with the remaining toast slices and they're ready to serve.
