For the Cheese Sauce:

  • In a small pot, mix evaporated milk and flour.
  • Add ¼ cup of skim milk, a bit of hot pepper sauce, salt, and pepper to the pot.
  • Turn the heat to medium and stir everything constantly until it gets hot and thick, which should take about 1 minute.
  • Lower the heat to low and add cheese. Keep stirring until it gets thicker, about 30 seconds.
  • Take the pot off the heat, cover it, and put it aside.

For the Eggs:

  • In a small bowl, beat the eggs, egg whites, some skim milk, salt, and pepper together.
  • Put oil in a large nonstick skillet and heat it over medium heat.
  • Pour the egg mixture into the skillet.
  • Cook the eggs, stirring them around, until they're fully cooked. This should take about 2 to 3 minutes.
  • Place the cooked eggs on 2 pieces of toast.
  • Drizzle each toast with the cheese sauce you made earlier.
  • Top them with the remaining toast slices and they're ready to serve.
