Weight Watchers Grilled Italian Bread and Tomato Salad
Ingredients
- 1½ tablespoon extra virgin olive oil
- 2 teaspoon red wine vinegar
- ¼ teaspoon dried oregano crumbled
- salt to taste
- fresh ground black pepper to taste
- 1½ fresh tomatoes cut in wedges, wedges halved
- ⅓ cup red onion thin sliced
- black olives (optional) to taste
- 3½ ounces italian bread cut into four 3/4-inch-thick slices
- nonstick cooking spray
- 1 clove garlic cut in half (to taste)
- ½ cup fresh basil roughly torn
Instructions
- In a large mixing bowl, add extra virgin olive oil, red wine vinegar, oregano, salt and pepper.
- Using a wire whisk, whisk together until well combined.
- In the mixing bowl, add tomatoes, and red onion. Toss to coat.
- Set aside tomato mixture and let marinate for 15 minutes.
- In the meantime, preheat outdoor grill.
- Prepare Italian bread by coating with non-stick cooking spray.
- When grill is heated, add prepared bread, and grill for approximately 2 minutes, flip and grill the other side for approximately 2 minutes.
- Take bread off of grill, and with the cut side of the garlic, rub the surface of both sides of the bread.
- Cut bread to bite sizes pieces.
- To serve, Add the bread and basil to the tomato mixture. Toss to coat.
