A quick and easy, and healthy side dish, lunch, or appetizer recipe that’s made with avocado, tomato, sweet onion, red bell pepper, green bell pepper, fresh lime juice, fresh cilantro, salt, and pepper.

You can make this tasty salad in just 10 minutes.

Vegan, and that also makes it Vegetarian.

Weight Watchers Avocado Salad

Ingredients you will need:

  • 2 avocado peeled, pitted and diced
  • 1 large ripe tomato chopped
  • 1 sweet onion chopped
  • ½ red bell pepper chopped
  • ½ green bell pepper chopped
  • ½ lime juiced
  • ¼ cup fresh cilantro chopped
  • salt to taste
  • black pepper to taste

Equipment you will need:

Medium Bowl

How to make:

  1. In a medium sized bowl, add avocados, tomato, sweet onion, red bell pepper, green bell pepper, and cilantro.
  2. Stir to mix.
  3. Add lime juice.
  4. Toss gently to coat.
  5. Season with salt and pepper to taste.
