Weight Watchers Grilled Lemon-Herb Chicken
Ingredients
- ¼ cup fresh oregano roughly chopped
- ¼ cup fresh rosemary finely chopped
- 6 cloves garlic finely chopped
- 1½ tbsp lemon zest
- 2 tsp salt
- 1 tsp ground black pepper
- 3 tbsp white wine vinegar
- 4 lbs (sixteen 4 oz each) boneless skinless chicken breasts
Instructions
- In a large mixing bowl, add fresh oregano, fresh rosemary, garlic, lemon zest, salt, and black pepper.
- Using a wire whisk, whisk in white wine vinegar.
- Place chicken in the mixture, coat all sides well.
- Place plastic wrap over the bowl, and place in the refrigerator for approximately 6 hours.
- Prepare grill rack by spraying with non-stick cooking spray.
- Preheat grill to high heat.
- On the prepared grill, place the chicken, and cook, turning once halfway through, approximately 6 – 7 minutes, or until the chicken is no longer pink, and when pierced the juices run clear, and an instant-read thermometer reads 165° F.
