Ingredients
 

  • ¼ cup fresh oregano roughly chopped
  • ¼ cup fresh rosemary finely chopped
  • 6 cloves garlic finely chopped
  • tbsp lemon zest
  • 2 tsp salt
  • 1 tsp ground black pepper
  • 3 tbsp white wine vinegar
  • 4 lbs (sixteen 4 oz each) boneless skinless chicken breasts

Instructions
 

  • In a large mixing bowl, add fresh oregano, fresh rosemary, garlic, lemon zest, salt, and black pepper.
  • Using a wire whisk, whisk in white wine vinegar.
  • Place chicken in the mixture, coat all sides well.
  • Place plastic wrap over the bowl, and place in the refrigerator for approximately 6 hours.
  • Prepare grill rack by spraying with non-stick cooking spray.
  • Preheat grill to high heat.
  • On the prepared grill, place the chicken, and cook, turning once halfway through, approximately 6 – 7 minutes, or until the chicken is no longer pink, and when pierced the juices run clear, and an instant-read thermometer reads 165° F.
