Equipment
Ingredients
- ½ pound whole wheat pasta
- 2 teaspoon olive oil
- 3 tomatoes diced
- 2 cloves garlic pressed
- 1 package (6oz) baby spinach
- 1 cup fat-free mozzarella cheese shredded
- 1 cup fat free ricotta cheese
- ½ teaspoon salt
Instructions
- Cook pasta following the directions on the pasta packaging.
- Using a colander, drain the water off of the pasta, and reserve ¼ cup of the pasta water.
- In the meantime, place a large skillet over medium/high heat.
- In the skillet, add oil. When hot, add tomatoes and garlic. cook for approximately 2 to 3 minutes or until the tomatoes are soft, stirring often.
- In the skillet, add spinach some of the spinach, stir to mix in, add more spinach, and repeat until all of the spinach has been added. Cook and stir until all of the spinach wilts.
- In the skillet, add reserved pasta water, cooked pasta, mozzarella cheese, ricotta cheese, and salt. Stir constantly until the cheese has melted.
- Serve immediately.
