Spray a small baking sheet's corner with cooking spray.
In a small cup, mix together soy sauce, scallion, oil, and ginger.
Take out 2 teaspoons of the sauce mixture and mix it with the vegetables. Keep the rest of the sauce aside.
Put the wonton wrappers on a flat surface.
Spoon 1 tablespoon of the vegetable mixture onto the center of each wrapper.
Use wet fingers to moisten the edges of the wrappers.
Fold one corner of the wrapper over to make a triangle and press the sides together to seal it.
Place the sealed wrappers on the prepared baking sheet.
Spray the wrappers with cooking spray.
Bake them in the oven for 10-12 minutes or until they turn golden and crispy.
Serve the baked triangles with the remaining soy sauce mixture.
