In a medium bowl, combine yogurt, lemon juice, garlic, and salt.
Place the bowl in the refrigerator until you're ready to use the sauce.
For the Zucchini Tots:
Grate the zucchini using the finest side of a box grater. You should have about 3 cups of grated zucchini.
Put the grated zucchini on a clean cloth with low-lint. Squeeze the cloth to remove as much moisture from the zucchini as possible.
In a large metal bowl, gently mix the grated zucchini with 2 beaten eggs, both cheeses, oregano, garlic, salt, and pepper. Squeeze out any excess moisture if needed.
Use your hands to scoop out 2 tablespoons of the zucchini mixture. Form it into a short log shape and place it on a pan lined with wax paper. Repeat this step with the remaining mixture.
Beat the remaining egg in a shallow bowl. Place the panko breadcrumbs in another shallow bowl.
Roll each zucchini tot first in the beaten egg and then in the panko breadcrumbs to coat it evenly. Place the coated tots back on the same pan.
Freeze the tots on the pan for 2 hours or overnight. This helps them stay together when cooking.
Preheat the air fryer to 400°F.
Place the frozen tots on the air fryer tray. If necessary, cook them in batches.
Air fry the tots at 400°F, gently turning them once, until they are well browned. This should take about 10 minutes.
Serve the zucchini tots warm with the yogurt sauce on the side.
