- 1 cup fat-free plain Greek yogurt
- 1 tablespoon fresh lemon juice
- 1 clove garlic minced
- 1 pinch kosher salt
- 6 medium zucchini trimmed
- 3 large eggs divided
- ½ cup part-skim mozzarella cheese shredded
- ½ cup grated parmesan cheese
- 1 teaspoon fresh oregano finely chopped
- 1 clove garlic minced
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 1 cup panko breadcrumbs
Instructions
For the Yogurt Sauce:
- In a medium bowl, combine yogurt, lemon juice, garlic, and salt.
- Place the bowl in the refrigerator until you're ready to use the sauce.
For the Zucchini Tots:
- Grate the zucchini using the finest side of a box grater. You should have about 3 cups of grated zucchini.
- Put the grated zucchini on a clean cloth with low-lint. Squeeze the cloth to remove as much moisture from the zucchini as possible.
- In a large metal bowl, gently mix the grated zucchini with 2 beaten eggs, both cheeses, oregano, garlic, salt, and pepper. Squeeze out any excess moisture if needed.
- Use your hands to scoop out 2 tablespoons of the zucchini mixture. Form it into a short log shape and place it on a pan lined with wax paper. Repeat this step with the remaining mixture.
- Beat the remaining egg in a shallow bowl. Place the panko breadcrumbs in another shallow bowl.
- Roll each zucchini tot first in the beaten egg and then in the panko breadcrumbs to coat it evenly. Place the coated tots back on the same pan.
- Freeze the tots on the pan for 2 hours or overnight. This helps them stay together when cooking.
- Preheat the air fryer to 400°F.
- Place the frozen tots on the air fryer tray. If necessary, cook them in batches.
- Air fry the tots at 400°F, gently turning them once, until they are well browned. This should take about 10 minutes.
- Serve the zucchini tots warm with the yogurt sauce on the side.
