For the Yogurt Sauce:

  • In a medium bowl, combine yogurt, lemon juice, garlic, and salt.
  • Place the bowl in the refrigerator until you're ready to use the sauce.

For the Zucchini Tots:

  • Grate the zucchini using the finest side of a box grater. You should have about 3 cups of grated zucchini.
  • Put the grated zucchini on a clean cloth with low-lint. Squeeze the cloth to remove as much moisture from the zucchini as possible.
  • In a large metal bowl, gently mix the grated zucchini with 2 beaten eggs, both cheeses, oregano, garlic, salt, and pepper. Squeeze out any excess moisture if needed.
  • Use your hands to scoop out 2 tablespoons of the zucchini mixture. Form it into a short log shape and place it on a pan lined with wax paper. Repeat this step with the remaining mixture.
  • Beat the remaining egg in a shallow bowl. Place the panko breadcrumbs in another shallow bowl.
  • Roll each zucchini tot first in the beaten egg and then in the panko breadcrumbs to coat it evenly. Place the coated tots back on the same pan.
  • Freeze the tots on the pan for 2 hours or overnight. This helps them stay together when cooking.
  • Preheat the air fryer to 400°F.
  • Place the frozen tots on the air fryer tray. If necessary, cook them in batches.
  • Air fry the tots at 400°F, gently turning them once, until they are well browned. This should take about 10 minutes.
  • Serve the zucchini tots warm with the yogurt sauce on the side.
