Butter Lettuce

Use large romaine leaves if butter lettuce isn’t available.

Blue Cheese

Feta is a good substitute if you prefer a milder cheese.

Bacon

Turkey bacon can replace regular bacon.

Greek Yogurt

Plain low-fat Greek yogurt can be used instead of nonfat Greek yogurt.

Light Mayonnaise

For the Dressing:

For the Lettuce Wraps:

  • 12 large butter lettuce leaves
  • 4 slices bacon cooked and crumbled
  • 2 large hard-boiled eggs chopped
  • 1 cup cherry tomatoes quartered
  • 1 medium avocado diced
  • cup reduced-fat blue cheese crumbles
  • ¼ cup red onion finely chopped
  • 2 tablespoon chopped fresh chives

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the chicken, garlic powder, smoked paprika, salt, and black pepper.
  • Cook for 8 to 10 minutes, stirring occasionally, until the chicken is browned and reaches an internal temperature of 165°F.
  • Remove the skillet from the heat and let the chicken cool for 5 minutes.
  • Add the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, garlic powder, salt, and black pepper to a small bowl. Whisk until smooth.
  • Divide the chicken, bacon, eggs, tomatoes, avocado, blue cheese, and red onion among the lettuce leaves.
  • Drizzle with the dressing and sprinkle with chives. Serve immediately.
