- 1 teaspoon olive oil
- 4 cups fresh baby spinach finely chopped
- 8 large eggs
- 1 cup liquid egg whites
- 1 cup low-fat cottage cheese
- ¾ cup reduced-fat feta cheese crumbled
- ¼ teaspoon garlic powder
- ¼ teaspoon dried oregano
- ¼ teaspoon ground black pepper
- 2 tablespoon green onions finely chopped
Instructions
- Preheat the oven to 350°F. Coat a standard 12-cup muffin pan with cooking spray.
- Heat the olive oil in a large skillet over medium heat.
- Add the spinach and cook for 2 to 3 minutes, stirring often, until wilted.
- Remove the skillet from the heat and let the spinach cool slightly.
- Add the eggs, egg whites, cottage cheese, garlic powder, oregano, and black pepper to a large mixing bowl. Whisk until well blended.
- Add the spinach, feta cheese, and green onions. Stir until evenly mixed.
- Divide the egg mixture evenly among the 12 prepared muffin cups.
- Bake for 20 to 22 minutes, or until the centers are set.
- Let the egg bites cool in the pan for 5 minutes.
- Run a thin knife around the edges of each egg bite. Remove the egg bites from the muffin pan.

Don’t overbake – Pull the egg bites from the oven once the centers are set. Baking too long can make them rubbery. Let them rest – Those 5 minutes in the muffin pan help the egg bites firm up enough to remove cleanly. Expect some puffing – Egg bites may rise in the oven and settle slightly as they cool.
